In the wood-rich room, a nest-like centrepiece above the bar is styled after indigenous hunting huts of old. The food, too, pays tribute to indigenous cultures, featuring native ingredients such as mock betel nut, fermented fish, millet and paper mulberry leaf. The tasting menu accentuates the terroir and seasonal ingredients while offering diners deeper insight into marine resources. Vegan menu available on reservation.
"We are committed to protecting ecology, from the forests to the mountains – and we promote agricultural reform, the well-being of producers and related issues through our everyday actions and purchases. The restaurant is decorated with discarded wood and 90% of ingredients are sourced locally, with a focus on indigenous produce. The leaves from forestry operations are used to extract aromas and add flavour to both our dishes and drinks. The team also serves as a consultant to address the issue of food waste and recycling in mountain restaurants."
