At a remove from the hubbub of Saint Tropez, this restaurant is housed in an elegant 17C bastide. The refined Mediterranean cuisine is testament to the technical prowess of chef Fabien Dondaine (formerly sous-chef at Le Chabichou in Courchevel) – 36hr-confit pork belly and roast pork tenderloin, potato millefeuille – and is in perfect harmony with the feel of the establishment, where luxury and authenticity go hand in hand. Superb terrace beneath the arbour, overlooking the swimming pool.
