They pick up their vegetables in a van which runs on biogas obtained by composting their waste. The aim is to utilise every part of their produce, which is grown with respect for nature and the seasons. Only biodynamic and natural wines are on offer. Sustainability is at the heart of the ethos of Rotonde, which is constantly seeking to improve itself. This vision translates into creative, intriguing taste sensations which are sophisticated and full of surprises. A spot by the open kitchen is a must if you want to watch the chefs tame the flames of their wood-fired barbecue!

"For us, terms like sustainable, local and green all amount to the same thing. We keep them in mind in all the decisions we make. We take responsibility for the sourcing of ingredients and the waste we create, among other things. We take responsibility for ourselves, but also for our diners. We communicate our vision as transparently as possible. We want to move towards a world where there is enough food for everyone, without harming animals, people or the planet itself."
