Nature takes centre stage at this tastefully converted farmhouse, which also has splendid guestrooms. The restaurant's Nordic-inspired design and large windows that make you feel connected to the outdoors reflect the house's commitment to sustainability. The menu is centred on ingredients from the Wadden Sea and Texel, which they have either grown themselves or sourced from friendly local purveyors. Produce such as peas, algae and lamb are showcased in vibrant creations, in which techniques such as fermentation and koji add intensity and depth. This exploration of Texel's ecosystems is truly fascinating.
