This restaurant is situated within the Feuerstein Nature Family Resort, a 5-star property which continues to expand and which nestles in the verdant Val di Fleres, not far from Vipiteno and even closer to the Austrian border. In the small, elegant dining room here, the focus is on creative, regional cuisine, with dishes often accompanied by herbs and vegetables sourced from the property’s own kitchen garden where they are grown without the use of chemicals. Top-quality seasonal ingredients take pride of place in the cuisine here, while the well-stocked wine cellar features a good selection of labels decanted in the dining room by the talented sommelier.
"The resort that houses the restaurant employs a woodchip heating system that uses only local wood, while the rest of its energy comes from the nearby hydroelectric power plant. The kitchen garden supplies the restaurant with vegetables and herbs, while the rest of the ingredients come from local organic crops and livestock. In the colder months, the chefs use preserved produce that has been fermented in a dedicated cellar."
