MICHELIN Guide’s Point Of View
This low-key sushi-ya boasts a spectacular collection of unglazed bizen ware. The head chef visits Japan regularly, both for inspiration and to bring home these exquisite pieces. He doesn’t talk much behind the counter but instead stays highly focused on his actions. Besides fish commonly seen on Edomae sushi, such as kasugodai, kohada and anago, if you’re lucky you may get to taste kombu-marinated Akashimamo shrimps – velvety and bursting with umami.
