MICHELIN Guide’s Point Of View
The chef of Chedi, who lived in Chiang Mai, Thailand for a time, aims to offer a fine dining experience with authentic Thai flavours. Familiar dishes are reinvented with artsy plating and flawless execution, such as his som tom that uses seasonal fruits instead of only green papaya. The counter seats are the best spots to watch the kitchen team at work – the making of khao pad kid terng, or signature fried rice, is quite a showstopper.
