Owner-chef Yujiro Maeda runs his restaurant with flair. Rather than have a fixed menu, Maeda chooses for each customer, serving up shuko for drinkers and relying on intuition and side dishes for those not imbibing. He does not write down his recipes; rather, he thinks hard about new combinations of ingredients. The leather-bound chairs in a sukiya setting and the mixture of Japanese and Western crockery combine to lend the restaurant a modern ambience.
