One Star: High quality cooking
The restaurant’s name, ‘Godan’, means ‘latter stage’, referring to the second half of a tea ceremony; after a final cup of especially dark tea, the tea master and guests linger there to chat over sake and drinking snacks. This, says owner-chef Masato Miyazawa, is the mood after which he patterns his shop. The speciality of the house is baked goma tofu made with seasonal vegetables. The richly inventive tsukuri is dressed with a mixture of Tosa soy sauce and kudzu starch.
