Stéphane Buyens and Ellen Duist have left their iconic Le Fox hostelry and moved to this lovely seaside villa. The enthusiastic couple welcomes you into a warm interior which provides the perfect foil for their virtuoso skill and flair. Ellen seamlessly supervises the front of house, while Stéphane crafts a delicate classical score with a soft spot for fish and seafood. Some of their iconic signature dishes include shrimp fritters, fluffy shrimp omelette and turbot in a pastry crust. In season, the menu often features game, exemplified by textbook-perfect, fork-tender saddle of hare flanked by a big-boned pepper sauce made with fresh pepper in a subtle touch that finds favour with fans of traditional cooking.
