1. Branzino e spinaci

Inspector's notes: This was the fish course on the menu – and what a delicious dish it was. The Mediterranean sea bass was presented as a small, crisp lozenge – it was full of flavor; it’s crunchy skin perfectly topped the soft and juicy white meat. The fresh fish was served with two tasty and carefully prepared sauces. The first was a creamy, milky pine nut-base with a rustic pile of well-seasoned spinach and whole pine nuts. The second was made of fresh chervil that was blitzed, which added a light herbal tone.
2. Taftoon and hummus

Inspector’s notes: The crispy taftoon bread came out steaming hot from the oven. It was shaped like a large disc – about the size of a small bicycle wheel – finished off with some sesame seeds and nigella seeds. It was great to eat with the hummus, which must have been one of the best I have eaten in ages. The creamy spread was made with black chickpeas, giving it a much deeper tone and taste, and it was topped with some fresh grated almonds for added creaminess. Such clean flavors!
3. Spicy rigatoni

Inspector’s notes: This is their signature dish and gosh, was it good. Some dried pasta was lightly cooked, still leaving it with a little bite. It is served in a creamy, rich tomato style sauce – glossy and buttery – with soft chunks of braised meat. The sauce also had a hint of cheesiness that came together with the rest of the ingredients. Not to forget, the chili was just enough to give it that special kick at the end to make it even more flavorsome.
4. Sea bass aguachile

Inspector’s notes: This tasty fish dish had sea bass cured with thin citrus slices, mixed with slightly softened cucumber and served with a sharp lemon-based dressing. It was surrounded by a lovely, smooth and creamy cucumber base – almost gazpacho-esque; with the weather being so warm, outside it was such a refreshing dish to eat with natural flavors and tones.
5. Wood-Roasted Beijing Duck

Inspector’s notes: The duck arrived glistening and lacquered after a slow 30-minute cook, then finished in the open kitchen oven for that perfect shine. Presented whole at the table, the chef carved it into delicate slices before serving alongside crisp pancakes, house-made sweet soy, spring onions, and cucumber – a flawless harmony of flavors. The experience continued with inventive bites: duck skin atop soft bread with a drizzle of soy, and finally, shredded duck wok-fried with ginger and vegetables, served in crunchy lettuce cups. 6. Zucchini wafers

Inspector’s notes: An immaculate looking dish of eight uniform, thin slices of zucchini, served hot – you’ll find it on their Levant menu. They were recommended by the waiter and I was not disappointed. The zucchinis are cooked and deep fried in a crisp, light tempura batter, creating such a crunchy bite. The wafers are served with a smooth dill, mint and aged feta dip. So refreshingly simple and natural in taste – some clever cooking!Illustration image: © Alba
