Tadaaki Tanaka selects ingredients from across Japan and cooks them with a freewheeling imagination, catering to guests’ requests and preferred portion sizes. The extensive menu includes seafood from the Fukuoka market as well as regional dishes from Kyushu. Works by the legendary artist and epicure Rosanjin Kitaoji adorn the walls. The call bells on the tables say ‘Press and we’ll come’ in Hakata dialect. The restaurant’s name comes from the Fukuoka-born owner, meaning simply ‘I’m Tanaka’, reflecting his determination to pursue the ‘Tanaka style’.
