Bang in the middle of the Saint Esprit district, Thibault Deverre is at the helm of this fully refurbished gastropub (as he himself dubs his eatery). The chef prepares crisp, spontaneous dishes with delicacy, originality and lashings of flavour: confit shoulder of lamb, a spicy sauce and a black garlic and Greek yoghurt seasoning; baked apple in whisky with a speculoos crumble. A resounding success with foodies – and paired with a wellness centre opposite.
