The top-notch cuisine is inextricably linked with the name Christoph Rüffer, who has been the chef here for over 20 years. His dishes follow a clear idea and retain their identity despite considerable technicality. He showcases the ingredients and incorporates meaningful contrasts without fussiness. The set menu comprises six courses plus several dishes to swap out or add on. The "Rock red mullet with grilled paprika sabayon, crocus polenta & pastis sauce", for example, combines the fantastic flavours of France with artisanal precision.
